Method

Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 200°C (400°F). Prepare four ramekins by greasing them with butter and lightly dusting with flour.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the dark chocolate and unsalted butter. Melt them together over a pot of simmering water (double boiler method) until smooth and combined. Remove from heat and let it cool slightly.

  3. 3

    Mix Sugar and Eggs

In a separate bowl, whisk together the granulated sugar and eggs until well combined and slightly frothy. Stir in the vanilla extract.

  4. 4

    Combine Mixtures

Gradually pour the melted chocolate mixture into the egg mixture, whisking continuously until fully incorporated.

  5. 5

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate-egg mixture. Gently fold until just combined, being careful not to overmix.

Baking

  1. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling them about 3/4 full.

  2. 7

    Bake

Place the ramekins in the preheated oven and bake for 12-14 minutes. The edges should be set, but the center should still be soft and slightly jiggly.

Serving

  1. 8

    Cool and Serve

Remove the ramekins from the oven and let them cool for 1 minute. Carefully run a knife around the edges to loosen the cakes. Invert onto plates and dust with powdered sugar. Serve immediately with a scoop of vanilla ice cream, if desired.
