Crust Preparation
Preheat Oven
Preheat your oven to 350°F (175°C).
Mix Crust Ingredients
In a medium bowl, combine the graham cracker crumbs, 0.5 cups of granulated sugar, melted unsalted butter, and salt. Mix until well combined.
Form Crust
Press the mixture evenly into the bottom of a 9-inch springform pan. Use the back of a measuring cup to pack it tightly.
Bake Crust
Bake the crust in the preheated oven for about 10 minutes. Remove and let it cool while preparing the filling.
Filling Preparation
Beat Cream Cheese
In a large mixing bowl, beat the cream cheese until smooth and creamy using an electric mixer.
Add Sugar and Sour Cream
Gradually add 1 cup of granulated sugar and 1 cup of sour cream to the cream cheese, mixing until fully combined.
Incorporate Vanilla and Eggs
Add the vanilla extract and mix to combine. Then, add the eggs one at a time, mixing on low speed after each addition until just combined.
Add Flour
Gently fold in the 2 tablespoons of all-purpose flour using a spatula, ensuring not to overmix.
Pour Filling into Crust
Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula.
Bake Cheesecake
Bake in the oven for 50-60 minutes, or until the center is set but still slightly jiggly.
Cool and Chill
Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour. Then, refrigerate for at least 4 hours, preferably overnight before serving.
