    In a shallow bowl, mix the flour, cornmeal, salt, black pepper, and paprika together until well combined.

    In another bowl, whisk together the eggs and milk until smooth.

    Bread the Walleye

    Dip each walleye fillet first into the egg wash, allowing excess to drip off, then coat with the breading mixture. Press gently to ensure an even coating.

    Heat the Oil

    In a large skillet, heat the vegetable oil over medium-high heat until shimmering.

    Fry the Walleye

    Carefully place the breaded walleye fillets in the hot oil, frying in batches if necessary. Cook for about 4-5 minutes on each side, or until golden brown and cooked through.

    Drain and Serve

    Remove the fried walleye from the skillet and drain on paper towels. Serve hot with lemon wedges and tartar sauce on the side.
