Preparation

    Preheat the Oven

    Preheat your oven to 300°F (150°C).

    Season the Brisket

    Pat the beef brisket dry with paper towels and season all sides generously with salt and black pepper.

    Prepare Vegetables

    Chop the onions, garlic, carrots, and celery into medium-sized pieces.

Browning

    Sear the Brisket

    In a large oven-safe pot or Dutch oven, heat a tablespoon of oil over medium-high heat. Sear the brisket on all sides until browned, about 4-5 minutes per side. Remove the brisket from the pot and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onions, carrots, celery, and garlic. Sauté until the vegetables are softened, about 5-7 minutes.

Braising

    Add Liquid and Seasonings

    Return the seared brisket to the pot. Add the beef broth, Worcestershire sauce, paprika, dried thyme, and bay leaves. Bring to a simmer.

    Cover and Braise

    Cover the pot with a lid and transfer it to the preheated oven. Braise for about 3-4 hours, or until the brisket is fork-tender.

Serving

    Slice and Garnish

    Remove the brisket from the pot and let it rest for 15 minutes before slicing it against the grain. Serve with the braising liquid and garnished with fresh parsley if desired.
