Preparing the Pork Belly

Season the Pork Belly
Preheat your oven to 300°F (150°C). Pat the pork belly dry with paper towels. Score the skin in a crosshatch pattern using a sharp knife, being careful not to cut into the meat. Rub salt and black pepper all over the pork belly, making sure to get it into the scored skin.

Roast the Pork Belly
Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, place the pork belly skin-side down in the skillet. Sear for about 5-7 minutes until the skin is crispy. Flip the pork belly over and transfer the skillet to the preheated oven. Roast for about 2 hours, or until the meat is tender.

Combine Ingredients
In a small saucepan over low heat, combine the harissa paste, honey, olive oil, and salt. Stir well and heat gently until warmed through, about 2-3 minutes. Remove from heat and set aside.

Serve the Dish
Once the pork belly is roasted, remove it from the oven and let it rest for 10 minutes. Slice the pork belly into servings, and drizzle the hot honey harissa sauce over each piece. Serve with the apple relish on the side, garnished with additional cilantro if desired.
