Method
Preparing the Batter
Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, sugar, and salt. Whisk together until well combined.
Mix Wet Ingredients
In another bowl, whisk together the milk, egg, melted unsalted butter, and vanilla extract until smooth.
Combine Ingredients
Pour the wet ingredients into the dry ingredients. Stir gently with a spatula or whisk until just combined. Be careful not to overmix; a few lumps are okay.
Cooking the Pancakes
Preheat the Pan
Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter to grease the surface.
Pour the Batter
Using a ladle, pour about 1/4 cup of batter onto the hot skillet for each pancake.
Cook the Pancakes
Cook until bubbles form on the surface of the pancake, about 2-3 minutes. Flip and cook for an additional 1-2 minutes on the other side until golden brown.
Keep Warm
Transfer the cooked pancakes to a plate and keep warm in a low oven while you cook the remaining batter.
Serving
Plate the Pancakes
Stack the pancakes on a plate, drizzle with maple syrup, and top with seasonal berries.
Enjoy
Serve immediately and enjoy your fluffy pancakes!
