Black Garlic & Rosemary Salt

Method
Prepare Beet Steak

Wash and Trim Beets
Rinse the baby beets under cold water to remove any dirt. Trim the tops and roots, leaving about an inch of the stem intact.

Marinate Beets
In a mixing bowl, combine the olive oil, salt, and black pepper. Add the beets and toss to coat them evenly. Let them marinate for at least 15 minutes.

Prepare Grilled Baby Leek

Prepare Leeks
Trim the roots and tops of the baby leeks. Rinse them gently to remove any soil.

Make Black Garlic & Rosemary Salt

Prepare Salt Mixture
In a small bowl, mash the black garlic cloves with a fork. Add the fresh rosemary and sea salt, mixing well to combine.
Prepare Avocado Crema

Assemble and Serve

Plate the Dish
On a serving plate, place the grilled beet steak. Top with grilled baby leeks and sprinkle the black garlic and rosemary salt over the top.

Add Avocado Crema
Drizzle or dollop the avocado crema on the side or over the grilled veggies. Serve immediately and enjoy!
