Method

Cooking the Chicken Thighs

    Prepare the Chicken

    Preheat the oven to 425°F (220°C). Season the chicken thighs with salt and black pepper on both sides. Heat olive oil in a large oven-safe skillet over medium-high heat.

    Sear the Chicken

    Once the oil is hot, place the chicken thighs skin-side down in the skillet. Sear for about 5-7 minutes until the skin is crispy and golden brown. Flip the thighs and cook for an additional 2 minutes.

    Bake the Chicken

    Transfer the skillet to the preheated oven and bake for 20-25 minutes or until the internal temperature reaches 165°F (75°C).

Preparing G Swiss Chard & Piquillo Pepper

    Sauté the Garlic

    In a separate pan, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

    Add Swiss Chard and Peppers

    Add the G Swiss chard and sliced piquillo peppers to the pan. Season with salt and sauté for 5-7 minutes until the chard is wilted and tender.

Roasting Butternut Squash

    Prepare the Squash

    While the chicken is baking, toss the cubed butternut squash with olive oil, salt, and ground cinnamon in a baking dish.

    Roast the Squash

    Roast in the oven for 25-30 minutes or until the squash is tender and caramelized, stirring halfway through.

Making Morita Chicken Jus

    Prepare the Jus

    In a saucepan, combine the chicken stock, dried morita chiles, chopped onion, and smashed garlic. Bring to a simmer over medium heat.

    Infuse the Flavors

    Simmer for 15-20 minutes to allow the flavors to meld. Remove from heat and strain the mixture to obtain a smooth jus.
