Crust Preparation
Prepare the crust
Preheat your oven to 325°F (160°C). In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
Form the crust
Press the mixture firmly into the bottom and slightly up the sides of a 9-inch springform pan. Bake in the preheated oven for about 10 minutes until set. Remove from oven and let cool while preparing the filling.
Filling Preparation
Mix the filling
In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in the granulated sugar and mix until combined.
Add remaining ingredients
Add the sour cream, vanilla extract, and eggs one at a time, mixing after each addition until well incorporated. Finally, add the all-purpose flour and mix just until combined.
Combine filling and crust
Pour the cream cheese filling over the cooled crust in the springform pan. Smooth the top with a spatula.
Bake the cheesecake
Bake in the preheated oven for 50-60 minutes, or until the center is set but still slightly jiggly. Turn off the oven and crack the door open, letting the cheesecake cool in the oven for 1 hour.
Chill and serve
Remove the cheesecake from the oven and let it cool to room temperature. Cover and refrigerate for at least 4 hours or overnight before serving. Once chilled, carefully remove the sides of the springform pan and slice to serve.
