Roasted Salmon Recipe
North Atlantic salmon and lightly seasoned roasted. Choose simply seasoned or with balsamic glaze. Served with two sides.

Method
Preparing the Salmon

Preheat the Oven
Preheat your oven to 400°F (200°C).

Prepare the Salmon
Place the North Atlantic salmon fillets on a baking sheet lined with parchment paper. Drizzle with olive oil, and season with salt and black pepper.
Making the Balsamic Glaze (optional)

Combine Ingredients
In a small saucepan, combine balsamic vinegar and honey.

Cook Down
Bring the mixture to a boil, then reduce heat and let it simmer until it thickens, about 10-15 minutes. Remove from heat and set aside.
Preparing the Sides

Prepare Asparagus
Trim the tough ends of the asparagus and toss them with a little olive oil, salt, and pepper. Spread on a baking sheet.

Prepare Baby Potatoes
Wash the baby potatoes and cut them in half. Toss with olive oil, salt, and pepper. Spread on a separate baking sheet.

Prepare Quinoa (if using)
Rinse the quinoa under cold water. In a pot, combine 1 cup of quinoa with 2 cups of water. Bring to a boil, then cover and simmer for 15 minutes until water is absorbed.
Roasting

Roast the Salmon and Asparagus
Place the salmon in the preheated oven along with the asparagus (and baby potatoes, if using). Roast for 12-15 minutes or until the salmon is cooked through and flakes easily with a fork.

Check Baby Potatoes
If roasting baby potatoes, check them after 20-25 minutes, they should be golden brown and tender.
Serving

Plate the Dish
Remove the salmon, asparagus, and any other sides from the oven. If using the balsamic glaze, drizzle it over the salmon before serving. Serve with quinoa or your choice of sides.
