
Chicken Fajita Flatbread Recipe
Crisp flatbread glazed with queso and topped with fajita-spiced grilled chicken, sautéed onions, peppers and Monterey Jack and cheddar cheeses. Finished with fresh pico de gallo, chopped cilantro and chipotle sauce.

Prepare the Chicken
Preheat a grill or grill pan over medium-high heat. Season the chicken breasts with fajita seasoning and a tablespoon of olive oil. Grill for 6-7 minutes on each side, or until fully cooked. Remove from heat and let rest for 5 minutes before slicing.

Sauté the Vegetables
In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add sliced onions and bell peppers. Sauté for about 5-7 minutes, or until tender. Remove from heat.
Assemble the Flatbreads

Glaze the Flatbread
Preheat the oven to 400°F (200°C). Place the flatbreads on a baking sheet and spread a generous layer of queso sauce over each piece.

Add Chicken and Vegetables
Top the queso-glazed flatbreads with the sliced grilled chicken, sautéed onions, and bell peppers. Sprinkle with Monterey Jack and cheddar cheeses.
Bake and Serve

Bake the Flatbreads
Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the cheeses are melted and bubbly.

Remove from the oven and top with pico de gallo, chopped cilantro, and a drizzle of chipotle sauce. Slice into pieces and serve immediately.
