Method
Make the Pesto

Prepare the Ingredients
In a food processor, combine fresh basil leaves, pine nuts, garlic cloves, and grated Parmesan cheese.

Blend the Pesto
Pulse the mixture a few times until finely chopped. With the processor running, slowly add olive oil until the pesto is smooth. Season with salt and black pepper to taste.
Cook the Salmon

Season the Salmon
Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper.

Sear the Salmon
In a large skillet, heat olive oil over medium-high heat. Add the salmon fillets, skin-side down, and cook for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for another 3-4 minutes until cooked through.
Prepare the Grits
Assemble and Serve

Plate the Dish
Spoon a generous portion of grits onto each plate, top with a seared salmon fillet, and drizzle with pesto.
