Preparation of Lamb Chops

Sear the Lamb
Heat a skillet over medium-high heat. Add the marinated lamb chops and sear for about 4-5 minutes on each side, or until they reach your desired level of doneness. Remove from heat and let rest.
Preparation of Potato Salad

Cook the Potatoes
Boil baby potatoes in salted water for 15-20 minutes, or until fork-tender. Drain and cool slightly. Cut into halves or quarters.

Mix the Salad
In a bowl, combine cooled potatoes, mayonnaise, Dijon mustard, diced red onion, chopped celery, salt, black pepper, and parsley. Mix well and refrigerate until serving.

Prepare the Vegetables
Slice the carrot, cucumber, and red bell pepper into thin strips.

Blend the Chimichurri
In a food processor, combine mint leaves, parsley, minced garlic, red wine vinegar, olive oil, salt, and black pepper. Blend until smooth. Adjust seasoning to taste.
