Prepare the Potatoes
Dice the potatoes into small cubes. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced potatoes, season with salt, pepper, garlic powder, and paprika. Cook, stirring occasionally, until golden brown and crispy (about 15-20 minutes). Remove from heat and set aside.
Cook the Steak
Preheat the grill or a grill pan over medium-high heat. Rub the sirloin steaks with the remaining tablespoon of olive oil, and season with salt and black pepper. Grill each steak for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from the grill and let rest for a few minutes.
Cook the Eggs
In a non-stick skillet, melt butter over medium heat. Crack the eggs into the skillet and cook them to your desired style (sunny side up, over easy, scrambled, etc.). Season with a little salt and pepper.
