Prepare the Rice
In a medium saucepan, bring 4 cups of water to a boil. Add the jasmine rice and a pinch of salt. Reduce heat, cover, and simmer for 15-20 minutes, or until the rice is tender and water is absorbed. Fluff with a fork and set aside.

Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the mixed seasonal vegetables and sauté for about 5-7 minutes, or until they are tender-crisp. Season with salt and pepper to taste. Remove from the skillet and set aside.

Cook the Salmon
In the same skillet, add the remaining tablespoon of olive oil. Season the salmon fillets with salt and pepper. Place the salmon skin-side down in the skillet and cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork.

Serve
On each plate, serve a portion of jasmine rice topped with sautéed vegetables. Place a salmon fillet on top and drizzle with tartar sauce. Garnish with lemon wedges on the side.
