Fried Calamari
Method
Cooking Instructions
Prepare the Calamari
Rinse the calamari rings under cold water and pat dry with paper towels.
Make the Breading Mixture
In a medium bowl, mix together the flour, cornstarch, salt, black pepper, garlic powder, and cayenne pepper.
Soak in Buttermilk
Place the calamari rings in a bowl, pour the buttermilk over them, and let them soak for 15 minutes.
Heat the Oil
In a large pot or deep fryer, heat the vegetable oil to 375°F (190°C).
Coat the Calamari
Remove the calamari from the buttermilk and dredge them in the flour mixture until well coated.
Fry the Calamari
Carefully add the calamari to the hot oil in batches, frying for about 2-3 minutes or until golden and crispy. Remove with a slotted spoon and drain on paper towels.
Fry the Peppers
In the same oil, fry the sliced jalapeños and cherry peppers for about 1-2 minutes until they are crispy. Remove and drain on paper towels.
Serve
Serve the crispy fried calamari with the fried jalapeños, cherry peppers, marinara sauce, and tartar sauce on the side.
