Soup Preparation

    Sauté the Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion, carrots, and celery. Sauté until vegetables are softened, about 5-7 minutes.

    Add Garlic and Tomatoes

    Stir in minced garlic and cook for another minute. Then add the diced tomatoes and cook for 2-3 minutes.

    Combine and Simmer

    Pour in the vegetable broth and add the dried basil, salt, and black pepper. Bring to a boil, then reduce heat and let it simmer for 20 minutes.

    Finish with Spinach

    Stir in the chopped spinach and let it cook for an additional 5 minutes. Adjust seasoning if necessary.

Focaccia Preparation

    Mix Ingredients

    In a large mixing bowl, combine warm water, yeast, and salt. Let it sit for 5 minutes until frothy. Gradually add in the flour, mixing until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 5-10 minutes until smooth. Place in an oiled bowl, cover, and let rise for 1 hour.

    Shape and Add Toppings

    Preheat the oven to 400°F (200°C). Once risen, punch down the dough and spread it onto a greased baking sheet. Dimple the surface with your fingers and drizzle with olive oil and sprinkle rosemary on top.
