Prepare Filling

Mix the Filling

In a large mixing bowl, combine ground chicken, chopped cabbage, grated carrot, chopped green onion, minced garlic, minced ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are evenly incorporated.

Assemble Dumplings

Fill Dumplings

Place a wonton wrapper on a clean surface. Add about 1 tablespoon of filling to the center of the wrapper. Moisten the edges with water, fold the wrapper over to form a half-moon shape, and pinch the edges to seal. Repeat until all filling is used.

Cook Dumplings

Steam or Pan-Fry

Heat a large skillet with a little oil over medium heat. Place dumplings in the skillet and cook until the bottoms are golden brown. Add a splash of water, cover, and steam for about 5-7 minutes until cooked through. Alternatively, steam dumplings in a bamboo steamer for 10-12 minutes.

Prepare Sauces

Make Ponzu Sauce

In a small bowl, mix soy sauce, lemon juice, rice vinegar, and minced ginger. Adjust seasoning to taste.

Serve

Plate the Dumplings

Drizzle teriyaki sauce over the cooked dumplings, and garnish with sesame seeds and sliced green onions. Serve with ponzu dipping sauce on the side.
