Cooking Pasta

    Cook Spaghetti

    Bring a large pot of salted water to a boil. Add spaghetti and cook according to package instructions until al dente. Reserve 1 cup of pasta water, then drain the spaghetti.

Preparing Carbonara Sauce

    Cook Bacon

    In a large skillet over medium heat, cook the smoked bacon until crispy. Remove bacon from the skillet, leaving the rendered fat.

    Sauté Garlic

    Add minced garlic to the skillet and sauté for 1-2 minutes until fragrant.

    Mix Sauce

    In a bowl, whisk together egg yolks, heavy cream, grated Parmesan cheese, and black pepper until well combined.

Combining Ingredients

    Combine Pasta and Sauce

    Add the drained spaghetti to the skillet with garlic and rendered bacon fat. Pour the egg mixture over the spaghetti, tossing quickly to combine and create a creamy sauce. Add reserved pasta water as needed to reach desired consistency.

    Add Protein

    If using chicken, cook it in the skillet until no longer pink, or add shrimp and cook until they turn pink and opaque. Toss to combine.

Serving

    Plate and Garnish

    Serve the carbonara in bowls, topped with crispy bacon, chopped green onions, and additional Parmesan cheese. Serve with garlic focaccia on the side.
