    Make the Beer Cheese Sauce

    In a saucepan over medium heat, combine Blonde Eagle Ale and cream cheese, stirring until the cream cheese is melted and smooth. Gradually add shredded cheddar cheese, garlic powder, onion powder, salt, and black pepper. Stir until well combined and heated through.

    Prepare the Lemon Sour Cream

    In a small bowl, mix sour cream with lemon juice until smooth. Set aside.

    Warm the Tortilla Chips

    Preheat the oven to 350°F (175°C). Spread tortilla chips on a baking sheet and warm in the oven for 5-7 minutes, until they are crispy and hot.

Assembly

    Assemble the Dish

    On a large serving platter, layer the warm tortilla chips. Top with black olives, melted cheddar and Monterey Jack cheeses, salsa fresca, radish, pickled jalapeños, aji peppers, and diced avocado. Drizzle the warm beer cheese sauce over the top.

    Finish with Sour Cream

    Add dollops of lemon sour cream on top and sprinkle with fresh cilantro. If desired, add cooked chicken or carne asada on top for additional protein.
