In a large bowl, combine the ground reindeer meat and pork fat. Mix well until evenly combined.

Add kosher salt, black pepper, garlic powder, onion powder, paprika, crushed red pepper flakes, dried thyme, and sodium nitrite to the meat mixture. Mix thoroughly to ensure all spices are evenly distributed.

Soak the Casings

Soak the pork casings in cold water for about 30 minutes. Rinse them thoroughly to remove any excess salt.

Stuff the Sausages

Using a sausage stuffer, carefully stuff the meat mixture into the soaked casings, being cautious not to overfill. Tie off the ends of the sausages with kitchen twine.

Cook the Sausages

Preheat a grill or smoker to medium heat. Cook the sausages for about 15-20 minutes, turning occasionally until they are fully cooked and reach an internal temperature of 160°F (70°C).
