    Make the Lemon Herb Mayo

    In a small bowl, mix together mayo, fresh lemon juice, dried oregano, dried basil, salt, and black pepper. Set aside.

    Cook the Bacon

    In a skillet over medium heat, cook the applewood smoked bacon until crispy. Remove and place on paper towels to drain.

    Prepare the Salmon

    Pat the sockeye salmon filets dry with paper towels. Season both sides with salt, black pepper, and cayenne pepper.

    Blacken the Salmon

    In the same skillet used for bacon, add a little oil if necessary, and increase the heat to medium-high. Add the salmon filets and sear for about 4-5 minutes on each side, or until cooked to your liking.

    Assemble the Dish

    On a plate, layer the lettuce, followed by the seared salmon, crispy bacon, slices of red onion, and tomato. Top with lemon herb mayo.
