Preparation and Assembly

    Prepare the Ingredients

    Slice the bell peppers and onion into thin strips. Season the steak with salt and black pepper.

    Cook the Steak

    In a skillet over medium-high heat, add 1 tablespoon of olive oil. Once hot, add the steak and cook for about 4-5 minutes on each side for medium-rare, or until cooked to your desired doneness. Remove from heat and let it rest for 5 minutes before slicing it thinly.

    Grill the Vegetables

    In the same skillet, add the remaining tablespoon of olive oil. Add the sliced bell peppers and onion, cooking until they are softened and slightly caramelized, about 5-7 minutes.

    Assemble the Sandwich

    Slice the Parisian rolls in half and spread mayonnaise on both sides. Layer the sliced steak on the bottom half, top with grilled peppers and onions, and finally sprinkle the smoked gouda cheese on top.

    Melt the Cheese

    Place the assembled sandwich under a broiler for 2-3 minutes, or until the cheese is melted and bubbly.

    Remove from the oven, close the sandwich, and serve immediately with brewpub fries on the side.
