Method

Dough Preparation

  1. 1

    Activate Yeast

In a small bowl, combine warm water, sugar, and active dry yeast. Let sit for 5-10 minutes until frothy.

  2. 2

    Mix Dough

In a large mixing bowl, combine flour and salt. Make a well in the center and pour in the yeast mixture and olive oil. Mix until a dough forms.

  3. 3

    Knead Dough

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

  4. 4

    Let Dough Rise

Place the dough in a lightly oiled bowl, cover with a cloth, and let rise in a warm place for 1 hour or until doubled in size.

Cooking Flatbreads

  1. 5

    Preheat Oven

Preheat your stone-fired oven or a baking stone in an oven to 475°F (245°C).

  2. 6

    Shape Dough

Punch down the risen dough and divide it into 6 equal pieces. Roll each piece into a flat, round shape about 1/4 inch thick.

  3. 7

    Add Toppings

If desired, brush each flatbread with olive oil and sprinkle with minced garlic, fresh herbs, and sea salt.

  4. 8

    Bake Flatbreads

Place flatbreads on the preheated stone or oven and bake for 5-7 minutes until puffed and golden brown.

  5. 9

    Serve

Remove from the oven, brush with additional olive oil if desired, and serve warm.
