    Activate the Yeast

    In a small bowl, mix warm water, honey, and active dry yeast. Let it sit for about 5-10 minutes until frothy.

    Mix the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a dough forms.

    Knead the Dough

    Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic. Add more flour if necessary to prevent sticking.

    Let it Rise

    Place the kneaded dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Flatbreads

    Once risen, punch down the dough and divide it into 8 equal pieces. Roll each piece into a ball, then flatten into a disk about 1/4 inch thick.

    Preheat the Stone

    If using a stone oven, preheat it to a high temperature (around 500°F/260°C). If using a skillet, heat it over medium-high heat.

    Cook the Flatbreads

    Place each flatbread on the hot stone or skillet. Cook for about 2-3 minutes on each side until puffed and golden brown. Repeat with remaining dough.

    Serve

    Serve warm with your favorite dips or spreads, or use as wraps for fillings.
