Preparation

    Prepare the Garlic Smashed Potatoes

    In a pot, boil the cubed potatoes until tender, about 15-20 minutes. Drain and return to pot.

    Mash the Potatoes

    Add butter, minced garlic, salt, and pepper to the boiled potatoes. Mash until smooth and creamy. Set aside.

    Cook the Seasonal Vegetables

    In a skillet, heat olive oil over medium heat. Add seasonal vegetables and sauté until tender, about 5-7 minutes. Season with salt and pepper.

    Prepare the Halibut

    Preheat the oven to 375°F (190°C). Place halibut filets on a baking sheet lined with parchment paper.

    Top with Cheese

    Sprinkle the grated Parmesan and Asiago cheeses generously over the halibut filets.

    Bake the Halibut

    Bake in the preheated oven for about 15-20 minutes or until the fish flakes easily with a fork.

    Make Lemon Butter Sauce

    In a small saucepan, melt remaining butter over low heat. Stir in lemon juice and season with salt and pepper to taste.

    Plate the halibut with garlic smashed potatoes and seasonal vegetables. Drizzle with lemon butter sauce before serving.
