Prepare the Fries
Wash and cut the potatoes into fry shapes. Rinse them in cold water to remove excess starch, then pat dry.

Make the Beer Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and pepper. Slowly whisk in the cold beer until the batter is smooth.

Prepare the Coleslaw
In a large bowl, mix the shredded cabbage, grated carrot, mayonnaise, dill pickle relish, and lemon juice. Toss until well combined and set aside.

Fry the Halibut
Heat additional oil in a deep frying pan over medium-high heat. Dip each halibut fillet into the batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown, about 4-5 minutes on each side. Remove and drain on paper towels.

Serve the crispy halibut with the brewpub fries, creamy coleslaw, housemade tartar sauce, and a side of malt vinegar.
