Preparing the Ingredients

Prepare the Fries
Peel and cut the potatoes into fries. Rinse them in cold water and pat dry.

Make the Coleslaw
In a large bowl, mix the shredded cabbage and carrots. In a separate bowl, combine mayonnaise, apple cider vinegar, sugar, salt, and black pepper. Pour the dressing over the cabbage mixture and toss well. Refrigerate until serving.

Prepare the Tartar Sauce
In a bowl, mix mayonnaise, chopped dill pickles, lemon juice, capers, and salt. Adjust seasoning to taste and refrigerate until needed.
Cooking the Halibut and Fries

Make the Beer Batter
In a bowl, whisk together flour, baking powder, salt, and black pepper. Gradually stir in the beer until smooth.

Fry the Halibut
Dip the halibut fillets into the beer batter, allowing excess batter to drip off. Carefully place in the hot oil and fry until golden brown, about 4-5 minutes per side. Drain on paper towels.
