Pretzel Dough

Method

Pretzel Preparation and Baking

  1. 1

    Prepare the Dough

In a large bowl, dissolve the sugar and yeast in warm water. Let it sit for about 5 minutes until frothy. Add the salt and flour gradually, mixing until a dough forms.

  2. 2

    Knead the Dough

Turn the dough out onto a floured surface. Knead for about 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise for 1 hour or until doubled in size.

  3. 3

    Shape the Pretzels

Preheat the oven to 450°F (230°C). Punch down the dough and divide it into 8 equal pieces. Roll each piece into a long rope, then shape into a pretzel.

  4. 4

    Prepare the Baking Soda Bath

In a large pot, bring 10 cups of water and the baking soda to a boil. Carefully drop each pretzel into the boiling water for about 30 seconds, then remove and place on a baking sheet lined with parchment paper.

  5. 5

    Bake the Pretzels

Brush each pretzel with the beaten egg and sprinkle with coarse sea salt. Bake in the preheated oven for 12-15 minutes or until golden brown.
