Chicken and Coating

Method

Preparation

  1. 1

    Prepare the Chicken

Flatten the chicken breasts to an even thickness using a meat mallet. Season with salt and pepper.

  2. 2

    Make the Battering Mixture

In a bowl, mix the all-purpose flour, cornstarch, salt, and pepper. In another bowl, whisk together the eggs and milk.

  3. 3

    Batter the Chicken

Dip each chicken breast first in the flour mixture, then in the egg mixture, and back in the flour mixture to coat thoroughly.

  4. 4

    Fry the Chicken

In a large skillet, heat the vegetable oil over medium-high heat. Fry the battered chicken breasts for about 5-7 minutes on each side or until golden brown and cooked through. Drain on paper towels.
