Cooking Directions

  1. 1

    Prepare the Caramelized Onions

In a skillet over medium heat, melt the butter. Slice the onions thinly and add them to the skillet. Sprinkle with sugar and stir occasionally until they start to soften.

  2. 2

    Deglaze with Smōk Lager

Once the onions are soft and caramelized (about 15-20 minutes), pour in the Smōk Lager. Stir and cook until the liquid reduces and the onions are fully caramelized, about 10 more minutes.

  3. 3

    Grill the Ribeye Steak

While the onions are caramelizing, preheat your grill to high heat. Rub the ribeye steak with olive oil, salt, and black pepper. Grill for 4-5 minutes on each side for medium-rare, or until desired doneness is achieved.

  4. 4

    Assemble the Sandwich

Once the steak is done, let it rest for a few minutes before slicing it thinly against the grain. Slice the Parisian rolls open, layer with smoked mozzarella, sliced ribeye, and top with the caramelized onions.

  5. 5

    Serve

Serve the sandwiches warm with brewpub fries on the side.
