    Prepare the Marinade

    In a small bowl, mix olive oil, lime juice, salt, and pepper to create a marinade.

    Marinate the Steak

    Cut the filet mignon into 1-inch cubes and place them in a zip-lock bag. Pour the marinade over the steak, seal the bag, and let it marinate for at least 30 minutes.

    Prepare the Vegetables

    While the steak is marinating, chop the radishes, avocado, red onion, and red bell pepper into bite-sized pieces. Set aside.

    Assemble the Skewers

    Preheat your grill to medium-high heat. Thread the marinated steak cubes, radishes, avocado, and red bell pepper onto skewers. Alternate with pieces of red onion.

    Grill the Skewers

    Place the skewers on the grill and cook for about 8-10 minutes, turning occasionally until the steak is cooked to your desired doneness.

    Serve

    Remove the skewers from the grill. Serve the skewers over a bed of cabbage and shredded romaine, topped with roasted corn, salsa fresca, Monterey Jack, and cheddar cheeses, and garnish with chopped cilantro.
