Crispy Chicken Bowl Ingredients

Method

Preparation Directions

  1. 1

    Prepare the Chicken

Cut chicken breasts into bite-sized pieces. In one bowl, combine flour and cornstarch. In a second bowl, beat the eggs. In a third bowl, place panko breadcrumbs.

  2. 2

    Coat the Chicken

Dip each piece of chicken first into the flour mixture, then into the egg, and finally coat with panko breadcrumbs.

  3. 3

    Fry the Chicken

In a deep skillet, heat oil to 350°F (175°C). Fry the coated chicken pieces in batches until golden brown and crispy, about 5-7 minutes. Drain on paper towels.

  4. 4

    Prepare the Rice

While the chicken is frying, cook the brown rice according to package instructions.

  5. 5

    Mix Sauce

In a small bowl, combine sweet Thai chili sauce with cooked chicken and toss to coat.

  6. 6

    Assemble the Bowl

In serving bowls, add cooked brown rice, top with the sweet chili chicken, and arrange shredded radish, carrot, bell pepper, red cabbage, and diced cucumbers.

  7. 7

    Finish with Toppings

Sprinkle sesame seeds over the top and serve with a side of sweet and spicy peanut sauce made by mixing peanut butter, soy sauce, honey, sriracha, garlic, and water.
