    Prepare the Halibut

    Preheat your grill to medium-high heat. Pat the halibut fillets dry with paper towels, then rub the blackening seasoning evenly over both sides of the fillets.

    Grill the Halibut

    Place the seasoned halibut fillets on the grill. Cook for about 4-5 minutes per side, or until the fish is opaque and flakes easily with a fork.

    Warm the Tortillas

    While the halibut is grilling, warm the corn and flour tortillas on a separate grill pan or directly on the grill for about 1-2 minutes until they are soft and pliable.

    Assemble the Tacos

    Once the halibut is cooked, remove it from the grill and let it rest for a few minutes. Flake the fish into bite-sized pieces. On each tortilla, layer cabbage, flaked halibut, Monterey Jack cheese, Mexican cheese blend, salsa fresca, and chopped cilantro.

    Serve

    Drizzle with housemade lemon sour cream. Serve the tacos with chips and salsa on the side.
