Beer-braised Corned Beef Sandwich

    Beer-Braising the Corned Beef

    In a large pot, heat olive oil over medium heat. Add sliced onion and minced garlic, sauté until soft. Add the corned beef brisket, beer, beef broth, black peppercorns, and bay leaves. Bring to a simmer, cover, and cook on low heat for 2.5 to 3 hours, until the beef is tender.

    Making the Thousand Island Dressing

    In a bowl, mix together mayonnaise, ketchup, sweet pickle relish, Dijon mustard, salt, and black pepper to taste. Set aside.

    Assembling the Sandwich

    Once the corned beef is cooked, remove it from the pot and let it rest for a few minutes before slicing it thinly. Lay slices of marbled rye bread on a clean surface. Spread a layer of thousand island dressing on each slice, then add a layer of sauerkraut, followed by the sliced corned beef and Swiss cheese. Top with another slice of bread to form the sandwich.

    Toasting the Sandwich

    In a skillet over medium heat, toast the assembled sandwiches on both sides until the bread is golden brown and the cheese is melted, about 3-4 minutes per side.
