Prepare the Halibut
Cut the Alaskan Halibut fillets into strips about 1 inch wide.

Make the Batter
In a large mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually whisk in the beer (or sparkling water) until the batter is smooth and well combined.

Heat the Oil
In a large pot or deep fryer, heat the cooking oil to 350°F (175°C).

Batter the Halibut Strips
Dip each halibut strip into the batter, allowing any excess to drip off.

Fry the Halibut
Carefully place the battered halibut strips in the hot oil, frying in batches to avoid overcrowding. Fry for about 4-5 minutes or until golden brown and cooked through.

Drain and Serve
Remove the fried halibut strips from the oil and drain on paper towels. Serve hot with brewpub fries.
