Prepare the Ingredients
Finely chop the onion and set aside. Slice the pickles and cheese.

Cook the Onion
In a skillet, heat a tablespoon of oil over medium heat. Add the chopped onion and sauté until translucent and slightly caramelized, about 5-7 minutes.

Form the Patties
In a mixing bowl, combine the ground elk with salt and black pepper. Form the mixture into 2 equal patties.

Cook the Patties
In the same skillet, increase the heat to medium-high and add the patties. Cook for about 4-5 minutes on each side, or until they reach your desired doneness. In the last minute of cooking, place a slice of white cheddar cheese on each patty to melt.

Assemble the Burger
Toast the burger buns if desired. Spread a tablespoon of chipotle mayo on the bottom half of each bun. Place the cooked elk patty with melted cheese on top, followed by sautéed onions and pickles. Top with the other half of the bun.

Serve the burgers immediately with your choice of sides.
