Pretzel Preparation

    Prepare the Dough

    In a large bowl, mix the warm water, sugar, and yeast. Let it sit for about 5-10 minutes until it becomes frothy. In a separate bowl, combine the flour and salt. Gradually add the flour mixture to the yeast mixture, mixing until a dough forms. Knead the dough on a floured surface for about 8-10 minutes until smooth.

    Let the Dough Rise

    Place the dough in a greased bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 hour or until doubled in size.

    Shape the Pretzels

    Preheat your oven to 450°F (230°C). Punch down the risen dough and divide it into 8 equal pieces. Roll each piece into a long rope, then twist it into a pretzel shape. Place the shaped pretzels on a baking sheet lined with parchment paper.

    Prepare the Baking Soda Bath

    In a large pot, bring 10 cups of water to a boil. Add 2/3 cup of baking soda to the boiling water (be careful, as it will bubble up). Gently place each pretzel in the water for about 30 seconds, then remove and return to the baking sheet.
