Prepare the Rice
Cook the rice according to package instructions. Fluff with a fork and set aside.

Make the Vinaigrette
In a small bowl, whisk together honey, soy sauce, rice vinegar, and sesame oil until well combined. Set aside.

Sear the Salmon
Season the salmon fillets with salt and black pepper. Heat olive oil in a skillet over medium-high heat. Once hot, add the salmon, skin-side down, and cook for about 4-5 minutes until the skin is crispy. Flip the salmon and cook for another 2-3 minutes until the desired doneness is reached.

Prepare the Tomatoes
While the salmon is cooking, chop the heirloom tomatoes into bite-sized pieces and set aside.

Assemble the Dish
On a plate, serve the cooked rice, top with seared salmon, and garnish with the chopped heirloom tomatoes. Drizzle the sweet and sour vinaigrette over the top before serving.
