Preparation
Take the Porterhouse steak out of the refrigerator and let it come to room temperature for about 30-60 minutes before cooking.

Seasoning
Generously season both sides of the steak with kosher salt and black pepper, pressing it into the meat to adhere.

Searing
In a large skillet or grill, heat olive oil over high heat until it's shimmering. Add the steak and sear for about 4-5 minutes on each side until a crust forms.

Adding Flavor
Add the garlic cloves and fresh rosemary into the skillet during the last minute of cooking for added flavor.

Checking Doneness
Use a meat thermometer to check the internal temperature. For medium-rare, it should register at 130°F (54°C). Cook longer for desired doneness.

Resting
Remove the steak from heat and let it rest for at least 10-15 minutes before slicing. This allows the juices to redistribute.

Slice the steak against the grain and serve with your favorite sides.
