    Prepare the Potatoes

    Peel the russet potatoes and grate them using a box grater or food processor. Rinse the grated potatoes in cold water to remove excess starch, then drain and pat dry with a clean kitchen towel.

    Sauté the Onion

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes.

    Cook the Hash Browns

    Add the grated potatoes to the skillet with the sautéed onions. Season with salt, black pepper, paprika, and garlic powder. Press the mixture down with a spatula and cook for about 5-7 minutes until the bottom is golden brown. Flip the hash browns in sections and add the remaining olive oil around the edges. Cook for another 5-7 minutes until the other side is golden brown.

    Garnish and Serve

    Once cooked, remove the hash browns from the skillet and sprinkle with fresh chives. Serve hot as a delicious side dish.
