Brisket Preparation

Season the Brisket
In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and smoked paprika. Rub this mixture all over the brisket, ensuring it's well coated.

Smoke the Brisket
Preheat your smoker to 225°F (107°C). Soak the wood chips in water for at least 30 minutes, then drain. Place the brisket in the smoker and add the soaked wood chips to the smoker box. Smoke the brisket for about 6-8 hours, or until it reaches an internal temperature of 195°F (90°C).

Prepare the Hoagie Rolls
While the brisket is resting, cut the hoagie rolls lengthwise without cutting all the way through. This will create a pocket for the fillings.

Assemble the Sandwich
Slice the rested brisket thinly against the grain. Place a generous portion of sliced brisket into each hoagie roll. Top with two slices of Swiss cheese.

Melt the Cheese
If desired, place the assembled sandwiches under a broiler for 2-3 minutes to melt the cheese slightly.

Serve with Au Jus
Heat the au jus in a small saucepan over medium heat. Serve each sandwich with a small bowl of au jus on the side for dipping.
