Carolina BBQ Sauce

Prepare the BBQ Sauce
In a medium saucepan, combine apple cider vinegar, ketchup, brown sugar, Worcestershire sauce, mustard, smoked paprika, cayenne pepper, salt, and black pepper. Stir well to combine.

Simmer the Sauce
Bring the mixture to a simmer over medium heat. Reduce heat to low and let it simmer for about 15 minutes until slightly thickened. Remove from heat and set aside.
Fried Jalapeño Caps

Prepare the Jalapeños
Slice the jalapeño peppers in half and remove the seeds. Set aside.

Fry the Jalapeños
Heat oil in a large frying pan over medium-high heat. Fry the coated jalapeños until golden brown, about 3-4 minutes per side. Remove and drain on paper towels.
Garlic Aioli

Prepare the Garlic Aioli
In a mixing bowl, combine mayonnaise, minced garlic, and lemon juice. Stir until smooth and season with salt to taste. Set aside.

Assemble the Dish
On a serving plate, layer the Carolina BBQ sauce, followed by Monterey jack cheese. Top with crispy fried onions and fried jalapeño caps. Drizzle with garlic aioli before serving.
