Method
Cooking the Rice
- 1
Rinse the Rice
Place 1 cup of jasmine rice in a fine mesh strainer and rinse under cold water until the water runs clear. This removes excess starch and helps prevent the rice from becoming gummy.
- 2
Cook the Rice
In a medium saucepan, combine the rinsed rice, 2 cups of water, and 0.5 tsp of salt. Bring to a boil over medium-high heat. Once boiling, reduce the heat to low, cover, and simmer for about 15 minutes, or until the water is absorbed and the rice is tender.
- 3
Rest the Rice
After the rice is cooked, remove it from the heat and let it sit, covered, for 5 minutes. This allows the rice to firm up and become fluffy.
Adding Flavor
- 4
Sauté the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add 0.5 cups of chopped onion and sauté for about 3-4 minutes until translucent. Then add 2 tsp of minced garlic and sauté for an additional 1 minute until fragrant.
- 5
Incorporate Jalapeños
Add the diced jalapeños to the skillet and cook for another 2-3 minutes, allowing them to soften and release their flavor.
- 6
Combine Rice and Flavorings
Once the rice has rested, fluff it with a fork and add it to the skillet with the sautéed vegetables. Stir in 0.25 cups of chopped cilantro and 1 tablespoon of lime juice, mixing everything together until well combined and heated through.
