Chicken Preparation

    Prepare the Chicken

    Pound the chicken breasts to an even thickness using a meat mallet to ensure even cooking. Season both sides with salt and black pepper.

    Breading the Chicken

    Set up a breading station: Place the flour in one bowl, whisk the eggs in a second bowl, and place the panko breadcrumbs in a third bowl. Coat each chicken breast in flour, dip in the eggs, and then coat with panko breadcrumbs.

    Frying the Chicken

    Heat the vegetable oil in a large skillet over medium-high heat. Once hot, carefully add the breaded chicken breasts. Fry for about 5-7 minutes on each side or until golden brown and cooked through. Remove from oil and drain on paper towels.

Honey Sriracha Sauce

    Make the Sauce

    In a medium saucepan over low heat, combine honey and sriracha sauce. Stir until well mixed and heated through. Set aside.

Coleslaw Preparation

    In a large bowl, combine shredded cabbage, shredded carrots, and sliced red pear. In a separate bowl, whisk together mayonnaise, sriracha sauce, apple cider vinegar, salt, and black pepper. Pour the dressing over the cabbage mixture and toss to combine.

Assembly

    Assemble the Sandwich

    Slice the brioche buns in half. Place a fried chicken breast on the bottom half, drizzle with honey sriracha sauce, and top with a generous portion of sriracha coleslaw. Add fresh cilantro leaves if desired, then place the top half of the bun on the sandwich.
