Preparation

  1. 1

    Prepare the Flank Steak

Remove the flank steak from the refrigerator and allow it to come to room temperature for about 30 minutes before cooking. This helps it cook evenly.

  2. 2

    Season the Steak

Pat the flank steak dry with paper towels. Season both sides generously with salt and black pepper.

Cooking

  1. 3

    Cook the Bacon

In a large skillet over medium heat, cook the bacon slices until crispy. Remove from the skillet and set aside on paper towels to drain excess fat.

  2. 4

    Sear the Steak

In the same skillet, using the bacon fat, increase the heat to medium-high. Add the seasoned flank steak and sear for about 4-5 minutes on each side, or until it reaches your desired level of doneness (medium-rare is about 130°F).

  3. 5

    Rest the Steak

Once cooked, transfer the flank steak to a cutting board and let it rest for 10 minutes. This allows the juices to redistribute.

Assembly

  1. 6

    Slice the Steak

After resting, slice the flank steak against the grain into thin strips.

  2. 7

    Prepare the Toppings

Crumble the cooked bacon and chop the green onions.

  3. 8

    Assemble the Dish

On a serving platter, arrange the sliced flank steak. Sprinkle the crumbled bacon, bleu cheese, and chopped green onions on top. Drizzle with balsamic glaze before serving.
