Fish Preparation

Prepare the Batter
In a large mixing bowl, combine the all-purpose flour, salt, black pepper, and baking powder. Gradually whisk in the beer until the batter is smooth and free of lumps. Set aside.

Cook the Fish
Heat vegetable oil in a deep fryer or large pot to 350°F (175°C). Dip the salmon or haddock fillets into the batter, allowing any excess to drip off. Carefully lower the fillets into the hot oil and fry for 4-5 minutes or until golden brown and cooked through. Remove and drain on paper towels.

Fry the Chips
In the same oil used for the fish, fry the potato wedges in batches for 5-6 minutes or until they are golden and crispy. Remove and drain on paper towels, then season with salt.
Serving

Plate the Dish
On a large plate, serve the fried fish alongside the crispy chips. Garnish with lemon wedges and serve tartar sauce and malt vinegar on the side.
