Method

Preparation of the Flank Steak

    Marinate the Steak

    In a bowl, combine olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Mix well. Place the flank steak in a resealable bag or shallow dish and pour the marinade over it. Ensure the steak is well coated. Seal the bag or cover the dish, and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

    Cook the Steak

    Preheat a grill or grill pan over medium-high heat. Remove the steak from the marinade and let excess marinade drip off. Grill the steak for about 6-7 minutes on each side for medium-rare, or until desired doneness is reached. Remove from grill and let rest for 5 minutes before slicing.

    Slice the Steak

    After resting, slice the steak against the grain into thin strips.

Taco Assembly

    Warm the Tortillas

    In a dry skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.

    Assemble the Tacos

    On each warm tortilla, add a few slices of grilled flank steak. Top with salsa verde, a sprinkle of queso fresco, a handful of cabbage slaw, a drizzle of smoked chile aioli, and a few pieces of fresh cilantro.

    Serve immediately while warm, with extra salsa verde and smoked chile aioli on the side if desired.
