Preparing the Fries

    Cutting the Potatoes

    Wash and peel the russet potatoes. Cut them into thin strips to form fries.

    Heat vegetable oil in a large pot or deep fryer over medium-high heat. Once hot, carefully add the cut potatoes in batches, frying them for about 5-7 minutes until they are golden brown and crispy. Remove and drain on paper towels. Season with salt immediately.

Cooking the Carne Asada

    Marinating the Steak

    In a bowl, mix olive oil, lime juice, garlic powder, cumin, salt, and black pepper. Add the flank steak, ensuring it is well coated. Let it marinate for at least 30 minutes.

    Preheat a grill or grill pan over medium-high heat. Grill the marinated flank steak for 4-5 minutes on each side for medium-rare. Remove from the grill and let it rest for 5 minutes before slicing into thin strips.

    On a large platter, layer the crispy fries. Top with sliced carne asada, then drizzle with salsa verde and smoked chile aioli. Sprinkle queso fresco cheese on top and add sliced avocado and fresh cilantro for garnish.
