Prepare the Protein
Choose your protein option: chicken, carne asada, or mixed vegetables. If using chicken or carne asada, slice into thin strips. If using vegetables, chop into bite-sized pieces.

Cook the Black Beans
Drain and rinse the canned black beans. Heat in a small saucepan over medium heat until warmed through, approximately 5 minutes.

Prepare the Jalapeño Rice
Cook the jalapeño rice according to package instructions (or make your own with cooked rice, sautéed jalapeños, and seasonings). Set aside.
Sautéing Vegetables

Sauté Peppers and Onions
In a large skillet, heat 1 tablespoon of oil over medium heat. Add sliced bell peppers and onions. Sauté for 5-7 minutes until tender and slightly caramelized.

Cook the Protein
In the same skillet, push the sautéed vegetables to the side and add the chosen protein. Cook for 5-8 minutes, stirring occasionally, until fully cooked (internal temp of chicken should reach 165°F / 75°C).

Warm the Tortillas
In a separate skillet or on an open flame, warm the corn or flour tortillas for about 30 seconds on each side until pliable.

Assemble Fajitas
On each tortilla, layer the sautéed protein and vegetable mixture, followed by black beans and jalapeño rice. Top with salsa and a dollop of sour cream.

Serve immediately with extra salsa and sour cream on the side.
